As reported in The Sydney Morning Herald, a new study of over 13,000 Australians reveals how dietary choices leave a measurable "lipid fingerprint" that predicts disease risk and longevity. Researchers from the Baker Heart and Diabetes Institute have identified distinct patterns in blood lipids that reflect what people eat and predict their risk of cardiovascular disease and premature death.
The study, published in Nature Communications, analysed comprehensive lipid profiles from 13,335 Australians across two major cohorts. The findings show that certain foods create recognisable "metabolic signatures" in the bloodstream — a biological marker of diet quality that's more predictive of health outcomes than traditional dietary questionnaires alone.
"We've discovered that the lipidome — the collection of all lipids in the blood — acts as an objective record of our dietary choices," says lead researcher Dr Habtamu Beyene.

The metabolic consequences of dietary choices offer a snapshot of an individual’s biochemical state. Identifying dietary lipidomic signatures provides valuable insights into diet-disease associations.
No one diet is optimal for everyone, and they hope in future that dietary advice could be provided for individuals based on their lipidomes so they can understand their metabolism. The research team identified how specific foods shape lipid metabolism:
- Higher quality diets (Mediterranean, MIND, and Australian Dietary Guidelines) all show protective lipid signatures. Mediterranean-style diets, rich in nuts, vegetables and fibre, were associated with around a 20 to 25 per cent lower risk of cardiovascular death.
- Two servings of fish a week produce a distinctive lipid signature rich in omega-3 fatty acids, and were associated with lower cardiovascular risk.
- Low-carb, high-saturated-fat diets increase the risk of cardiometabolic disease and reduce life expectancy.
- If someone’s diet is too heavily reliant on red meat, the problematic lipids outweigh the beneficial ones. This can be pro-inflammatory and increase the risk of cardiovascular disease.
- There are particularly beneficial lipid profiles for those who eat more eggs. This correlates with other research where they've found eggs reduce the risk of Alzheimer's disease.
These lipid signatures predicted cardiovascular outcomes and all-cause mortality more strongly than self-reported dietary data.
"Our findings suggest that diet works through lipid metabolism to influence health," explains researcher Professor Peter Meikle. "By understanding these pathways, we can develop more targeted dietary interventions to prevent cardiometabolic disease."
To make these findings accessible to other researchers, the team has developed an interactive web-based tool allowing scientists to explore how dietary patterns influence lipid metabolism — opening avenues for personalised dietary and lifestyle strategies.
