This tender, caramelised cauliflower steak served with creamy herb-flecked tahini sauce makes a satisfying plant-based entrée that's both elegant and nourishing.

Ingredients
1 medium cauliflower
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
1 teaspoon smoked paprika
2 cloves garlic, minced
Salt and pepper to taste
½ cup finely chopped parsley leaves

Herbed tahini sauce
½ cup tahini paste
2 cloves garlic
¼ cup parsley
¼ cup coriander
2 tablespoons lemon juice
Salt, to taste
Cold water, as needed

Cauliflower steak with tahini sauce

Preparation

  1. Preheat the oven to 200°C.
  2. Wash the cauliflower thoroughly. Remove the leaves and cut off the base of the cauliflower stem. Keep the cauliflower stem side down and slice it in half using a sharp knife. Then, cut each half into two more slices to yield 4 cauliflower steaks.
  3. In a bowl, mix olive oil, lemon juice, smoked paprika and minced garlic.
  4. Place the cauliflower slices on a parchment-lined baking tray. Brush half of the prepared mixture on the cauliflower slices. Season it with salt and pepper.
  5. Bake for 15 minutes. Remove the tray from the oven and carefully flip the cauliflower. Brush the remaining half of the mixture and season it with salt and pepper. Bake for another 15 minutes until the cauliflower steaks turn golden brown.

 

  1. Meanwhile, make the herbed tahini sauce. In a blender, combine garlic, parsley, coriander, and lemon juice. Blend until well combined. Add tahini paste and blend until you get a smooth paste. Now, add water and mix well until you reach the desired consistency. Season with salt to taste.
  2. To serve, spread a generous amount of tahini sauce on each serving plate. Place the baked cauliflower steaks on top of the sauce, and then sprinkle finely chopped parsley leaves over them.

Tips

  • When selecting cauliflower for making steak, opt for fresh cauliflower with a dense head. This ensures that the steaks hold their shape when slicing.
  • When you slice cauliflower into steaks, some of the florets fall off. Don’t discard them, you can roast them along with the steak. Alternatively, you can store and use in some other recipes such as cauliflower soups.
